Ramen Santouka from Hokkaido, Japan @ The Central, Clarke Quay




Ramen Santouka
is a branch of ramen chain from the city of Asahikawa in Hokkaido, Japan. There are lots of Santouka branches in the USA (especially in Los Angeles) and now in Singapore. I have figured out that lots of bloggers have mentioned a lot about this ramen shop -- It's a kind of the best ramen shop in Singapore !!!

What is the key of success of this ramen shop ??? It's from the soup !!! Since they use the pork bone soup (Tonkotsu Soup which is a mild white color). Tonkotsu ("pork bone") ramen has usually a cloudy white colored broth - a thick broth made by boiling pork bones, fat, and collagen over high heat for hours ...

For this ramen shop, they do not only try to mention about their good taste of soup (like others do) but also mention about the right temperature of soup serving. To eat it comfortably and delicious, they use the right temperature for their soup when serving. I think this is to mention to all Chinese in Singapore since they might like really hot soup for noodle dish.

We ordered two types of ramen -- one was Shio Ramen (made from plenty of salt) at $15.0 on set with fried rice & salad and the other was Miso Ramen (made from miso - produced by fermenting rice, barley and/or soybeans, with salt and soy) at $11.0.

In my opinion, I get use to the significantly difference among types of ramen (Shio, Miso, Tonkotsu, or Shoyu). Therefore, my standard preference would be a significantly difference type of soup starting from the seeing, smelling, tasting, including an after taste which each type of ramen can give !!!

I don't say that Ramen Santouka is not delicious -- I mean their ramen and soup is good but the soup itself (their signature pork bone) do the job too well. It overwhelms the taste of Shio or Miso. As I say, I am more keen on the difference -- Too bad, my preference is at Ramen Tei in Bangkok (see ; http://lolo-eatablethai.blogspot.com/2008/11/for-ramen-tei-it-gonna-be-ramen.html)

By the way, the pork is great (soft with a mix of fat in between). Therefore, it was able to melt into my mouth easily. Not only that, the taste is just right (not too salty or too sweet).


Don't forget to try other dishes such as Cold Tofu -- It's a really great tofu (soft & tender with good smell from soya).

This is to remind you that (as the shop said) -- if such situation of soup running out, we may shorten the day of business hour !!!
